Ingredients
    For the Pudding:
  • 1/2 cup Rice Flour
  • 1/2 cup Sugar
  • 1/2 tablespoon Ground Cinnamon
  • 1/2 tablespoon Ground Caraway
  • 3 1/4 cups Water
  • For the Garnish:
  • 1/4 cup Pistachio Kernels
  • 1/4 cup Almonds
  • 1/4 cup Walnuts
  • 3 tablespoons Pine Nuts
  • 3 tablespoons Sultanas
  • 3 tablespoons Desiccated coconut
  • 2 tablespoons Dried rose petals
  • Note: Feel free to personalise the garnish with your preferred nuts or enjoy the pudding plain.
Instructions
  1. Prepare the Nuts:

    Soak pistachios, almonds, walnuts, and pine nuts in separate bowls overnight in the refrigerator.

  2. Mix the Pudding:

    In a casserole, blend rice flour, sugar, cinnamon, and caraway. Gradually add water, stirring to prevent lumps. For a smoother texture, strain the mixture.

  3. Cook:

    Over medium heat, stir the mixture until it thickens into a pudding consistency.

  4. Chill:

    Transfer the pudding to serving dishes. Let it cool to room temperature, then refrigerate for at least 6 hours or overnight.

  5. Garnish and Serve:

    Drain the nuts. Garnish the pudding with coconut, nuts, sultanas, and rose petals. Enjoy it cold for the best experience.
